The most popular tradition of Chile is the Fiestas Patrias. It is held on September 18 and 19 to respect the First Assembly Government in the year 1810. They dance, drink wine, fly kites, they play games such as the Chilean style horse races, and flags are raised. Some of the dishes they eat on that day include empanadas and shish kabobs. They wear traditional clothing on that day.
